Sweet Potato Tacos

Notes:
"(This is formatted) as a recipe, but it’s more like a pretty flexible idea - garnishes and types of pepper are really changeable based on what you have available. I bought sweet potatoes because they last in the pantry a long time- any peppers you like could work in this."

Serves: 4, but can be scaled up or down as needed.
Ingredients:
1 large sweet potato
1 red pepper
1 poblano pepper
1 clove garlic
Cohiba cheese*
Tortillas Favorite salsa
*or favorite cheese
Steps:
Peel sweet potatoes
For ease of chopping, microwave for 5 minutes to soften, then chop into small chunks
Add olive oil to skillet on medium heat
Add chopped garlic and peppers
Sauté until slightly soft
Add sweet potatoes
Sauté until crispy
Remove sweet potatoes and peppers from skillet
Throw the tortillas in the skillet to warm them
Assemble and serve
